And here we are, ready for the Quarter Finals of EURO 2020!
This time, when we found out that Italy’s next opponent would be Belgium, we didn’t even bother to do research on the Belgian cuisine to seek inspiration for our next Match Time Munchies.
We’ve had just one thought in mind: BEER!
So grab a big bottle of ice-cold Leffe, some fresh vegetables and a good Italian cheese and get ready to enjoy these yummy Baked Frittelle with Beer Batter.
As the name suggests, we have indeed used the traditional Belgian beer as the main ingredient to prepare the batter of our frittelle. The result is a delicious, slightly bitter and very aromatic taste.
And this is just the first of the many virtues of this recipe!
The other one is that it takes only 30 minutes to prepare the frittelle and you won’t even need to mess up your kitchen, because they cook in the oven.
We have used a muffin pan, because we like to have many mini bites to munch during Italy v Belgium, but any pan or tray will do the job.
And now guess what is the best drink to enjoy our Baked Frittelle with Beer Batter?
Baked Frittelle with Beer Batter
Ingredients
For the Beer Batter
- 100 gr Flour
- 170 gr Beer ice-cold
- 2 pinch Salt
For the Fritters
- 1 Courgette or any other vegetable you like
- 1 Mozzarella or any other cheese you like
- 2-3 Anchovies
Instructions
- Cut the courgette, the mozzarella and the anchoives in small pieces.
- Grease a muffin pan with olive oil (be generous!) and then fill all the muffin moulds with some cubes of courgette, mozzarella and achoives.
- Add the flour and the salt in a bowl and then slowly pour the cold beer. Stir everything together with a whisker to obtain a smooth batter.
- Gently pour the beer batter in each muffin mould. The ingredients must be completely covered with the batter.
- Cook the fritters in the oven at 200° for 30 minutes.
