Gran Cereale Breakfast Cookies

Have you ever been to an Italian supermarket? If you had, you would know that Italians love a breakfast cookie just by looking at the choice and size of the biscuit aisle! Of course tradition and innovation coexist on the shelves, where novelties and new recipes pop out alongside all time classics.

Gran cereale is one of them.

Although this cookie is not one of the children’s favourites as it’s considered ‘healthy’, it’s been quite popular among Italian adults of all ages also thanks to all of its different variations on the theme.

Here at Linguini, we like Italian cookies but we also like making them at home and putting our healthy twist when we can. That’s why we would like to share with you today a very simple recipe (plus its chocolate spin-off) that will bring you enough breakfast cookies for the whole week… or maybe just for a couple of days!

Gran Cereal Breakfast Cookies

Delicious wholegrain cookies with nuts, dried fruits and no added sugar

Ingredients
  

  • 100 grams Wholemeal Flour
  • 55 grams Old Fashioned Oats
  • 45 grams Nuts (Any nuts you like)
  • 75 grams Dried fruits (Dates, sultanas, apricots.. etc. They all work. Make sure to soak them before using)
  • 1 tsp Baking powder
  • 40 grams Seed Oil
  • Half Apple (or half pear or half peach, they all work)

For the chocolate version

  • 1 tbsp Cocoa Powder
  • 50 grams Dark Chocolate (chopped)

Instructions
 

  • Put flour, oats, nuts, baking powder and dried fruits (plus cocoa and chocolate if you are making the chocolate version) in a mixer and blend everything together until well combined.
  • Add the oil and the half apple (roughly chopped) and blend again.
  • Shape the cookies. The final dough must be coarse but easy to shape with your hands (if it is too dry, add some more oil or another piece of apple).
  • Cook the cookies in the oven at 180° for approximately 15 mins (until golden brown).
  • Your Gran Cereale are ready! You can keep them in a airtight container for several weeks.

Notes

This recipe has no added sugar (the dried fruits provide the sweetness). However if you prefer a sweeter taste, you can add two tablespoon of sugar.
